Pocket Salad

An appetizing and colorful pocket salad combining many differnt flavors, ideal for summer.

Serves 3-4


Ingredients: bean curd Sushi skin, green, yellow, red & orange bell peppers, peas, corn kernels, apple, cucumber, carrot, head lettuce, variety of nuts/seeds (sesame, pine nuts, walnuts, almond, etc.) and dried fruits (raisin, cranberry, etc...).

Sauce: olive oil and salad dressing (pick your own flavor).

Steps:


[1] Warm up the bean curd Sushi skin and set aside to cool down.


[2] Boil peas and corn kernels in water for couple minutes and drain them under cold water or set aside to cool down.


[3] Cut all variety of colorful bell peppers into ½ dice and place them in a mixing bow. Add in peas and corn kernels from [2] and mix with olive oil.


[4] For each bean curd sushi skin, put in several sliced thin lettuce at the bottom and add in colorful diced bell peppers, peas, diced apples. Then add in dried fruits (sesame, pine nuts, etc) with a small amount of salad on the top.

[5] Decorate the pocket salad with several thin strips of cucumbers and carrots. Arrange and serve them on a plate with your own favorite fruits like kiwi slices.


口袋沙拉

材 料 : 壽司腐皮 (Bean Curd Sushi Skin), 青, 黃, 紅, 橘彩椒 ( Color Bell Pepper), 青豆仁, 玉米粒, 蘋果, 小黃瓜, 紅蘿蔔, Head Lettuce 萵苣, Nuts/ Seeds (芝蔴, 松子, 核桃, 杏仁 ….. ), 乾果 (葡萄乾, 蔓越莓乾..).

調味料 : Olive Oil 橄欖油, 任選自己喜愛的 Salad Dressing 沙拉醬.

做 法 :

[1] 壽司腐皮加熱後, 放涼。

[2] 青豆仁, 玉米粒汆燙後, 放涼。

[3] 各色彩椒, 蘋果切小丁, 放入碗中。 加入青豆仁, 玉米粒, 拌入少許 Olive Oil備用; Lettuce萵苣, 小黃瓜 , 紅蘿蔔切細絲備用。

[4] 將壽司腐皮口袋, 先裝入少許 Lettuce萵苣細絲, 再舀裝入彩椒, 豆仁, 蘋果丁, 灑上芝麻, 松子, 乾果等。 再淋上少許沙拉醬…。

[5] 最後以小黃瓜, 紅蘿蔔絲, 裝飾擺盤即可。
